Cranberry Orange Quinoa Muffins

Makes: 12 Servings

INGREDIENTS

  • ½ cup UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grains Medley, prepared
  • 2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • ¾ cup dark brown sugar
  • 4 tablespoons butter, softened
  • ½ cup oats
  • 3 ounces vegetable oil
  • ¾ cup buttermilk
  • 1 each egg
  • ½ cup dried cranberries
  • 1 teaspoon orange extract
  • teaspoon orange zest, minced

Almond Butter Drizzle

  • ¼ cup warm water
  • ¼ cup almond butter
  • 1½ tablespoons maple syrup

DIRECTION

  1. Preheat oven to 350°F and spray a muffin pan with nonstick baking spray. Set aside.
  2. In a small bowl, whisk together Almond Butter Drizzle ingredients. Set aside.
  3. In a large mixing bowl, combine flour, salt, baking powder and oats.
  4. In a separate bowl, combine buttermilk, egg, orange extract. Set aside.
  5. Combine brown sugar and butter in stand mixer. Add in wet mixture, followed by the dry mixture.
  6. Slowly add in UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grains Medley, oil, cranberries and orange zest. Mix together until just combined.
  7. Scoop batter into prepared pan, filling to the top.
  8. Bake for approximately 30 minutes or until done and remove from oven. Top with Almond Butter Drizzle and serve.
