Creamy Chicken & Ancient Grain Medley Soup

Makes: 4 Servings

INGREDIENTS

  • 1¼ cups UNCLE BEN’S® Roasted Red Pepper Flavored Brown Rice & Quinoa, prepared
  • 2 tablespoons butter
  • 2 each garlic cloves, minced
  • ½ cup onions, diced
  • 2 each celery stalks, sliced
  • 2 carrots, peeled and sliced
  • ½ teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 4 cups chicken stock
  • 1 cup chicken breast, cooked, shredded
  • ¼ cup half-and-half
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 teaspoon parsley, chopped

DIRECTION

  1. Add butter to saucepan and place over medium heat. Add garlic, onion, celery and carrots. Sauté for approximately 5 - 7 minutes. Add thyme and stir until fragrant. Remove from pan and set aside.
  2. Whisk flour, chicken stock, UNCLE BEN’S® Roasted Red Pepper Flavored Brown Rice & Quinoa and shredded chicken into pan. Stir until slightly thickened and add vegetable mixture.
  3. Add half-and-half, salt and pepper and bring to simmer. Ladle into serving bowls, top with parsley and serve.
