Ingredients

  • 3 ½ heaping cups Ben's Original Whole Grain Brown Rice, prepared
  • 1/3 heaping cup Red Quinoa, prepared
  • 2 Tablespoons Butter
  • 2 each Garlic, minced
  • 1/2 cup Onion, diced
  • 2 each Celery Stalks, sliced
  • 2 ea Carrots, sliced
  • 1/2 teaspoon Dried Thyme
  • 2 Tablespoons All Purpose Flour
  • 4 cups Chicken Stock
  • 1 cup cooked Chicken Breast, cut into 1” pieces
  • 1/4 cup Half & Half
  • 3/4 teaspoon Salt
  • 1/4 teaspoon ground Black Pepper
  • 4 teaspoons Parsley, chopped

Creamy Chicken & Whole Grains Soup

Makes: 4 Servings

Direction

  1. Add butter to saucepan and place over medium heat. Add garlic, onion, celery and carrots. Sauté for approximately 5 - 7 minutes. Add thyme and stir until fragrant. Remove from pan and set aside.
  2. In a pot, whisk flour and allow to cook for minute. Whisk in chicken stock, brown rice, quinoa and chicken. Stir and allow to simmer until slightly thickened. Add vegetable mixture and allow to simmer for 2 minutes.
  3. Add half & half, salt and pepper and bring to simmer. Adjust taste as needed.
  4. Divide equally into serving bowls, top with parsley and serve.
