Smashed Avocado Taco made with UNCLE BEN’S INFUSED® Mexican Flavor Rice

UNCLE BEN’S INFUSED® Mexican Flavor Rice brings authentic, south-of-the-border flavor to these creamy avocado veggie tacos.

INGREDIENTS

  • 1 cup UNCLE BEN’S INFUSED® Mexican Flavor Rice, prepared
  • 1 each ripe avocado
  • 2 each limes
  • 2 cloves garlic
  • ¼ teaspoon Cumin
  • ¼ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons chipotle in adobo sauce
  • ¼ cup apple cider vinegar
  • ½ tablespoon sugar
  • ½ each red onion, thinly sliced
  • ½ cup Napa cabbage, shredded
  • ¼ cup cotija cheese, crumbled
  • 4 tortillas

DIRECTION

  1. Smashed Avocado: Mash avocado, juice of one lime, garlic, cumin chili powder and half of the salt in a small bowl until chunky. Set aside.
  2. Chipotle Crema: Combine juice of remaining lime, mayonnaise, sour cream, chipotle in adobo and the other half of the salt in a small bowl. Set aside.
  3. Pickled Onion: Combine apple cider vinegar, sugar and red onions in a small bowl. Let stand for at least 30 minutes.
  4. Assemble: Place smashed avocado into each tortilla followed by the infused rice, crema, cabbage, red onion and top with cotija. Serve.
