Cajun Fried Rice

Makes: 4 servings

Deep South fried rice with red beans, andouille sausage and shrimp


  • 4 cups UNCLE BEN’S® Red Beans & Rice, prepared
  • 3 tablespoons light olive oil
  • 8 ounces andouille sausage, sliced
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • Pinch of ground red pepper
  • Pinch of thyme, dried
  • 1 pound small shrimp, cooked, peeled, deveined
  • 3 green onions, slivered
  • Cilantro for garnis


  1. Heat oil in large skillet. Add sausage and cook until lightly browned. Remove from pan and set aside.
  2. Add onion, celery and bell pepper to skillet. Sauté for a few minutes until tender. Add the garlic, seasonings, shrimp and sausage. Continue cooking for a few minutes, then add beans and rice.
  3. Remove from stove, portion and top with green onions and cilantro. Serve.
