Hawaiian Luau Rice Bowl

6 cups BEN’S ORIGINAL™ Whole Grain Brown Rice

3½ cups crushed pineapple in juice

7 cups water

1 cup low-sodium soy sauce

6 ¼ pounds chicken, diced

1 quart sweet peas

3 cups crispy onions

Direction
- in oven-safe pan, combine BEN’S ORIGINAL™. Whole Grain Brown Rice, pineapple (with juice), water and soy sauce.
- Cover tightly and bake in 350°F oven 55 minutes or until most of the liquid is absorbed.
- While rice is in the oven, spread diced chicken onto 2 sheet pans; place in same oven as rice and cook until an internal temperature of 165°F has been reached.
- Remove from oven, stir in baked chicken and peas; let stand covered 5 minutes.
- Fluff rice to mix; hold at 160°F. To serve, scoop 1 cup rice mixture onto a plate and top with crispy onions.
