Avocado Toast Whole Grain Power Bowl

  • 1 cup BEN’S ORIGINAL™ Whole Grain Brown Rice, cooked
  • 2 ripe avocados
  • 2 limes, juiced
  • 1⁄4 cups heirloom cherry tomatoes, halved
  • 1 1⁄2 teaspoon salt
  • 4 cups baby spinach, lightly sautéed
  • 4 eggs, poached

Avocado Toast Whole Grain Power Bowl

Makes: 4 servings


  1. Slice avocado and spritz with the juice of one lime. Set aside.
  2. Toss cherry tomatoes, the remaining lime juice and salt in a bowl. Set aside.
  3. Assemble: Place rice into each bowl followed by the avocado, tomatoes, spinach and egg. Serve.
