Buffalo Chicken Wrap

Ingredients
- 3 c BEN’S ORIGINAL™ Whole Grain Brown Rice, prepared according to box
- 1½ c roasted chicken breast
- 1 c hot sauce
- ¾ c celery
- ¾ c carrots
- ½ c blue cheese crumbles
- 6 T scallion
- 1½ t Kosher salt
- 12 10” Flour Tortillas
Plating:
- 12 sundried tomato wraps, 9.5” diameter
Buffalo Chicken Wrap
Makes: 12 Servings
Direction
Filling:
- Mix chicken with hot sauce and coat fully.
- Fold in remaining ingredients excluding tortillas.
- Set aside.
Plating (one portion):
- Heat a sandwich press with grill marks to high.
- Fill 7 oz (3/4 c + 2 T) of filling into the center of the tortilla. Elongate filling into an even oval.
- Wrap all four sides of the tortilla, making an enclosed wrap/burrito.
- Grill wrap until marks are formed and the wrap is holding its shape.
- Allow to cool for 4 minutes.
- Cut on a bias.
