Buffalo Chicken Wrap

Ingredients

  • 3 c BEN’S ORIGINAL™ Whole Grain Brown Rice, prepared according to box
  • 1½ c roasted chicken breast
  • 1 c hot sauce
  • ¾ c celery
  • ¾ c carrots
  • ½ c blue cheese crumbles
  • 6 T scallion
  • 1½ t Kosher salt
  • 12 10” Flour Tortillas


Plating:

 

  • 12 sundried tomato wraps, 9.5” diameter

 

Buffalo Chicken Wrap

Makes: 12 Servings

Direction

Filling:

  1. Mix chicken with hot sauce and coat fully.
  2. Fold in remaining ingredients excluding tortillas.
  3. Set aside.

Plating (one portion):

  1. Heat a sandwich press with grill marks to high.
  2. Fill 7 oz (3/4 c + 2 T) of filling into the center of the tortilla. Elongate filling into an even oval.
  3. Wrap all four sides of the tortilla, making an enclosed wrap/burrito.
  4. Grill wrap until marks are formed and the wrap is holding its shape.
  5. Allow to cool for 4 minutes.
  6. Cut on a bias.
