California Quinoa Salad

Makes: 4 Servings

INGREDIENTS

  • 2 cups UNCLE BEN’S™ INTERNATIONAL GRAINS™
    Quinoa & Ancient Grains Medley, prepared
  • 8 cups fresh spinach
  • ½ cup tomatoes, diced
  • 2 each avocados, sliced
  • ¼ cup feta cheese, crumbled

Meyer Lemon Vinaigrette

  • ¾ cup Meyer lemon juice
  • ¼ cup white wine vinegar
  • ¼ cup light olive oil
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon salt

DIRECTION

  1. In a small bowl, whisk together vinaigrette ingredients. Set aside.
  2. Divide spinach into each serving bowl. Top with UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grains Medley, tomatoes, avocado and feta cheese.
  3. Drizzle lemon vinaigrette over top and serve.
