Chicken Kabobs with Sundried Tomato Rice Pilaf

Ingredients
Marinated Chicken:
- 6 lb chicken breast cut into 1” cubes
- 6 c Italian dressing, prepared
Sundried Tomato Rice Pilaf:
- 5¼ c BEN’S ORIGINAL™ Rice Pilaf
- ¾ c BEN’S ORIGINAL™ Rice Pilaf seasoning pack
- 8¼ c water
- 3 c tomato juice, low sodium
- ½ c sundried tomato, julienne
- 4½ oz butter
Plating:
- ½ c parsley, minced
Chicken Kabobs with Sundried Tomato Rice Pilaf
Makes: 12 servings
Direction
Marinated Chicken:
- Fully submerge chicken cubes in Italian dressing and allow to marinate overnight.
Sundried Tomato Rice Pilaf:
- Combine all ingredients in a pot. Bring to a boil then cut to a simmer. Simmer 25-30 minutes.
- Allow there to be a little liquid left over, then remove from heat. Let sit for 5 minutes.
- After 5 minutes, stir rice.
- Allow to sit for another 10 minutes.
- Fluff with fork and reserve for plating.
Plating:
- Skewer 3 cubes per skewer (each skewer is approx 2 oz).
- Sear or grill over high heat until slightly charred.
- Finish in oven until fully cooked.
One Serving: 3 skewers of chicken atop:
- 1 c sundried tomato rice pilaf
- 1/4 T minced parsley (garnish)
