Chicken Kabobs with Sundried Tomato Rice Pilaf

Ingredients

Marinated Chicken:

  • 6 lb chicken breast cut into 1” cubes
  • 6 c Italian dressing, prepared

Sundried Tomato Rice Pilaf:

  • 5¼ c BEN’S ORIGINAL™ Rice Pilaf
  • ¾ c BEN’S ORIGINAL™ Rice Pilaf seasoning pack
  • 8¼ c water
  • 3 c tomato juice, low sodium
  • ½ c sundried tomato, julienne
  • 4½ oz butter

Plating:

  • ½ c parsley, minced

Chicken Kabobs with Sundried Tomato Rice Pilaf

Makes: 12 servings

Direction

Marinated Chicken:

  1. Fully submerge chicken cubes in Italian dressing and allow to marinate overnight.

Sundried Tomato Rice Pilaf:

  1. Combine all ingredients in a pot. Bring to a boil then cut to a simmer. Simmer 25-30 minutes.
  2. Allow there to be a little liquid left over, then remove from heat. Let sit for 5 minutes.
  3. After 5 minutes, stir rice.
  4. Allow to sit for another 10 minutes.
  5. Fluff with fork and reserve for plating.

Plating:

  1. Skewer 3 cubes per skewer (each skewer is approx 2 oz).
  2. Sear or grill over high heat until slightly charred.
  3. Finish in oven until fully cooked.

One Serving: 3 skewers of chicken atop:

  1. 1 c sundried tomato rice pilaf
  2. 1/4 T minced parsley (garnish)
