Chili-Lime Quinoa, Chicken & Arugula Salad

Ingredients
- 2 cups BEN’S ORIGINAL™ Whole Grain Brown Rice & Quinoa, prepared
- 16 ounces chicken chunks
- 8 cups arugula
- 1 cup shredded carrots
- 1 cup dried cherries
- 1 cup chili-lime dressing (see directions)
Chili-Lime Dressing
- ¾ cup lime juice
- ¼ cup soy sauce
- 2 tablespoons light olive oil
- ½ tablespoon crushed red pepper

Direction
Chili-Lime Dressing
- Whisk together all ingredients and refrigerate until cold.
Assembly
- Cook chicken and set aside.
- In a large mixing bowl, toss together BEN’S ORIGINAL™ Whole
Grain Brown Rice & Quinoa, arugula, shredded carrots, dried
cherries and chili-lime dressing. Add chicken chunks and
softly toss into salad.
