Chili-Lime Quinoa, Chicken & Arugula Salad

Ingredients

FOR ASSEMBLY:

  • 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
  • ¼ cup Red Quinoa, prepared
  • 8 cups Arugula
  • 1 cup Carrots, shredded
  • 1 cup Dried Cherries
  • 1 pound Cooked Chicken Breast, chopped into 1” pieces

Chili-Lime Dressing:

  • 3/4 cup Lime Juice
  • 1/4 cup Soy Sauce
  • 2 Tablespoons Light Olive Oil
  • 1/2 Tablespoons Crushed Red Pepper

Chili-Lime Quinoa, Chicken & Arugula Salad

Makes: 4 Servings

Direction

Chili-Lime Dressing:

  1. Whisk together all ingredients and reserve.

Assembly:

  1. In a large mixing bowl, toss together brown rice and quinoa, arugula, shredded carrots, dried cherries and chili-lime dressing. Add chicken chunks and softly toss into salad. Divide equally among 4 serving vessels.
