Greek Rice Salad
Ingredients
- 1 box BEN’S ORIGINAL™ Rice Pilaf, cooked, cooled
- 6 vine ripe tomatoes, diced
- 2 red onion, thinly sliced
- 2 seedless cucumber, diced
- 2 small red bell pepper, diced
- 2 small green bell pepper, diced
- 2 cup Kalamata black olives, sliced
- 1 cup fresh flat-leaf parsley
- 3/4 cup Greek feta cheese, crumbled
- 1/4 cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon dried oregano
Greek Rice Salad
Makes: 12 servings
Direction
- Combine cooled rice, vegetables, olives, and parsley in a large mixing bowl.
- Combine oil, vinegar, and oregano in a small mixing bowl. Add just enough dressing to vegetables to coat; toss well.
- Garnish with crumbled Greek feta.
