Ingredients

  • 1 box BEN’S ORIGINAL™ Rice Pilaf, cooked, cooled
  • 6 vine ripe tomatoes, diced
  • 2 red onion, thinly sliced
  • 2 seedless cucumber, diced
  • 2 small red bell pepper, diced
  • 2 small green bell pepper, diced
  • 2 cup Kalamata black olives, sliced
  • 1 cup fresh flat-leaf parsley
  • 3/4 cup Greek feta cheese, crumbled
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon dried oregano

Greek Rice Salad

Makes: 12 servings

Direction

  1. Combine cooled rice, vegetables, olives, and parsley in a large mixing bowl.
  2. Combine oil, vinegar, and oregano in a small mixing bowl. Add just enough dressing to vegetables to coat; toss well.
  3. Garnish with crumbled Greek feta.
