Holiday Turkey and Long Grain & Wild Rice Salad

Ingredients
Creamy Cranberry Vinaigrette:
- 1 c cranberries, fresh, rinsed and dried
- ½ c apple cider vinegar
- 6 T honey
- 2 t Dijon mustard
- ½ c orange juice
- ½ t Kosher salt
- 1 pinch ground black pepper
- 2 c extra virgin olive oil
Salad Mixture:
- 7½ c BEN’S ORIGINAL™ Long Grain & Wild Rice, prepared according to box
- 1½ c kale, washed, dried, rough chop
- 36 oz turkey breast, prepared, ½” dice
- 3 c granny smith apples, ½” dice
- ¾ c carrots, finely shredded
- ¾ c pecans, toasted, rough chop

Makes: 12 Servings
Direction
Creamy Cranberry Vinaigrette:
- Combine all in a blender top except for oil. Blend on high.
- Drizzle oil.
- Reserve.
Plating:
- In a large mixing bowl, mix BEN’S ORIGINAL™ Long Grain & Wild Rice, kale, turkey, apples and carrots.
- Plating 1½ c of salad mixture and top with 1 T of pecans for one serving.
- Serve with 1.5 fl oz of creamy cranberry vinaigrette.
