Lean, Green Power Bowl

Makes: 12 servings

 

INGREDIENTS

Avocado Lime Vinaigrette:
  • 2 avocado, seed removed, peeled
  • 2 t garlic, minced
  • 1 t Kosher salt
  • ¼ c lime juice
  • ¼ c water
  • 2 T rice wine vinegar
  • ½ c cilantro leaves, washed, dried
  • 1 c light olive oil

Salad Mixture:
  • 6 c UNCLE BEN’S® Roasted Chicken Flavored Brown Rice, prepared according to box
  • ¾ c kale, washed, chopped
  • ¾ c baby spinach, long stems trimmed
  • 1½ c broccoli florets, roughly chopped
  • ¾ c sprouts

Plating:
  • 36 oz roasted chicken breast, prepared, thinly-sliced
  • 6 T pepitas, roasted and salted
  • 1½ c jicama, julienned

    DIRECTION

    Avocado Lime Vinaigrette:

    1. Place all in a blender top except for oil. Blend on high and drizzle in oil.
    2. Reserve.

    Salad Mixture:

    1. Mix all in a bowl.
    2. Reserve.

    Plating:

    • Place ¾ c salad mixture into a to-go container.
    • Top with 3 oz chicken and ½ T pepitas.
    • Serve with 1.5 fl oz avocado lime vinaigrette.
