Meatball Skewers over Tomato Basil Rice

Ingredients

  • 7 qts. Water, hot (190°F)
  • 4 boxes BEN’S ORIGINAL™ Tomato & Herb Brown Rice
  • 50 Slim wooden sticks with rounded edges, 7½-inch
  • 150 Frozen chicken meatballs, ½-ounce, commercially prepared, thawed
  • 6¼ cups Spaghetti sauce, meatless
  • 12½ oz. Shredded reduced-fat Italian cheese blend

Meatball Skewers over Tomato Basil Rice

Makes: 50 servings

A fun play on spaghetti and meatballs made with whole grain tomato basil flavored brown rice. A trio of tender Italian meatballs are skewered on a stick and served over BEN’S ORIGINAL™ Tomato & Herb Brown Rice, and topped with a 4 cheese Italian blend.

Direction

  1. Combine 3½ quarts hot water and contents of two seasoning packets in deep full-size steam table pan. Repeat with remaining water and seasoning packets in second deep full-size steam table pan. Stir both well to disperse seasoning in water. Add 2 boxes of rice and beans to each pan and mix well.
  2. Cover each and bake in preheated 400°F conventional oven for 25 minutes or until most of the water is absorbed.
  3. Stir rice well; keep warm. Fluff with fork prior to portioning to obtain maximum yield.
  4. Thread 3 thawed meatballs on each stick, brush each skewer with 2 tablespoons spaghetti sauce and transfer to parchment-lined sheet pans.
  5. Bake according to packaging instructions, turning halfway through cook time; keep warm.
  6. To assemble each serving, portion 1 cup of rice on plate, top with 1 meatball skewer, and sprinkle with ¼ ounce shredded cheese blend.

Suggestions

- Consider making ½ ounce meatballs from scratch utilizing ground meat, egg, and seasonings.
- Eliminate skewers and combine meatballs with spaghetti sauce in steam table pans to heat, portion 3 meatballs over rice, and top with cheese.
