Pacific Northwest Flatbread

Ingredients

  • ⅓ heaping cup Ben's Original Whole Grain Brown Rice, prepared
  • 2 1/2 heaping tsp Red Quinoa, prepared
  • 3 Tablespoons Unsalted Butter
  • 1 Garlic Clove, minced
  • 1 tablespoon Parsley, chopped
  • 4 ounces Smoked Salmon, sliced
  • 3/4 cup Caesar Dressing
  • 1 cup Baby Arugula
  • 1/4 cup Parmesan Cheese, shaved
  • 1 ea Flatbread, made by baking pizza crust into a 12" x 9" rectangular pan
  • 1 Tablespoon Balsamic Glaze

Pacific Northwest Flatbread

Makes: 9 pieces

Direction

  1. Preheat oven to 350°F.
  2. In a saucepan over medium heat, add butter, garlic and parsley until fragrant. Brush on flatbread and bake for approximately 4 minutes.
  3. Mix brown rice and quinoa. Top flatbread with Caesar dressing, smoked salmon, brown rice and quinoa. Bake for an additional 5 - 8 minutes. Remove.
  4. Portion into 4" x 3" pieces and immediately top with arugula, shaved Parmesan cheese and then drizzle balsamic glaze over top. Serve immediately.
