Pacific Northwest Flatbread

Makes: 4 Servings

INGREDIENTS

  • ½ cup UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grain Medley, prepared
  • 3 tablespoons butter, unsalted
  • 1 each garlic clove, minced
  • 1 tablespoon parsley, chopped
  • 4 ounces smoked salmon, sliced
  • ¾ cup Caesar dressing
  • 1 cup baby arugula
  • ¼ cup Parmesan cheese, shaved
  • 1 flatbread pizza crust, 10 - 12", rectangular
  • 1 tablespoon balsamic glaze

DIRECTION

  1. Preheat oven to 350°F.
  2. In a saucepan over medium heat, add butter, garlic and parsley until fragrant. Brush on flatbread and bake for approximately 4 minutes.
  3. Top flatbread with Caesar dressing, smoked salmon and UNCLE BEN’S™ INTERNATIONAL GRAINS™ Quinoa & Ancient Grains Medley. Bake for an additional 5 - 8 minutes. Remove.
  4. Immediately add arugula and shaved Parmesan cheese, drizzle balsamic glaze over top and serve.
