Pineapple Upside-Down Bars Made with TWIX® Cookie Bars

Ingredients
- 2 cups TWIX® Cookie Bars, chopped
- 20 oz. crushed pineapple, canned
- 1 1/2 sticks unsalted butter
- 3/4 cup dark brown sugar
- 1 1/2 cups all purpose flour
- 2 teaspoons ground cardamom
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 teaspoon vanilla extract

Direction
- Preheat oven to 350ºF.
- In a small pot over medium-high heat, add crushed pineapple and cook out the liquid.
- Add half the butter and all the dark brown sugar, and cook until caramelized; set aside.
- Sift together flour, cardamom, baking powder and salt.
- Beat remaining butter in a stand mixer with the granulated sugar until light and fluffy, then gradually add each egg.
- Add in the vanilla, then continue on low until fully mixed.
- Slowly add the flour mixture on low until fully combined.
- Grease the bottom of a 10" x 10" pan. Pour in the crushed pineapple, butter and brown sugar mixture.
- Pour batter over top, then generously add chopped TWIX® Cookie Bars over top.
- Bake for 45 minutes until cake is fully cooked.
