Pineapple Upside-Down Bars Made with TWIX® Cookie Bars

Ingredients

  • 2 cups TWIX® Cookie Bars, chopped
  • 20 oz. crushed pineapple, canned
  • 1 1/2 sticks unsalted butter
  • 3/4 cup dark brown sugar
  • 1 1/2 cups all purpose flour
  • 2 teaspoons ground cardamom
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract

Pineapple Upside-Down Bars Made with TWIX® Cookie Bars

Direction

  1. Preheat oven to 350ºF.
  2. In a small pot over medium-high heat, add crushed pineapple and cook out the liquid.
  3. Add half the butter and all the dark brown sugar, and cook until caramelized; set aside.
  4. Sift together flour, cardamom, baking powder and salt.
  5. Beat remaining butter in a stand mixer with the granulated sugar until light and fluffy, then gradually add each egg.
  6. Add in the vanilla, then continue on low until fully mixed.
  7. Slowly add the flour mixture on low until fully combined.
  8. Grease the bottom of a 10" x 10" pan. Pour in the crushed pineapple, butter and brown sugar mixture.
  9. Pour batter over top, then generously add chopped TWIX® Cookie Bars over top.
  10. Bake for 45 minutes until cake is fully cooked.
