Power Breakfast Wrap

Makes: 4 Servings

INGREDIENTS

  • 2 cups UNCLE BEN’S® Whole Grain Brown Rice & Quinoa, prepared, kept warm
  • ½ pound bacon
  • 8 each eggs
  • ¾ cup cheddar cheese, shredded
  • ½ cup baby spinach, washed
  • 4 each whole-grain tortillas, 10" or larger, steamed

DIRECTION

  1. Add bacon to cold skillet and place on stovetop over medium heat. Cook until desired doneness, remove bacon, leaving the fat. Chop the cooked bacon and set aside.
  2. Add eggs to remaining fat in skillet and scramble, reducing heat after one minute. When eggs are almost finished cooking, add ½ cup of the shredded cheddar cheese and combine until melted. Remove from heat, cover and set aside.
  3. Layer the spinach, cheesy scrambled eggs, bacon, UNCLE BEN’S® Whole Grain Brown Rice & Quinoa and remaining cheese. Roll into a burrito and serve.
