Mediterranean Wrap

Ingredients

For Garlic Yogurt Dressing:

  • 1/2 cup Plain Nonfat Greek Yogurt,
  • 5 1/2 Tablespoons Lemon Juice
  • 1 Tablespoon Light Olive Oil
  • 1/2 teaspoon Garlic, minced
  • 1 teaspoon Parsley, chopped

For Chicken:

  • 10 ounces Chicken Breast, cut into strips
  • 2 Tablespoons Light Olive Oil
  • 2 ea Garlic, minced
  • 2 ½ Tablespoons Lemon Pepper Seasoning

For Assembly:

  • 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
  • ¼ cup Red Quinoa, prepared
  • 1 cup Kale Green, chopped
  • 1/4 cup Olive Tapenade
  • 1/4 cup Feta Cheese, crumbled
  • 4 small Flatbreads

Makes: 4 servings

Direction

For Garlic Yogurt Dressing:

  1. In a small bowl, whisk together ingredients. Set aside.

For Chicken:

  1. In a mixing bowl, add chicken strips, garlic and lemon pepper seasoning, and toss until combined. Set aside.
  2. Heat oil in a skillet over medium high heat. Add marinated chicken strips and cook on each side for approximately 3 minutes. Set aside.

To Assemble:

  1. Mix brown rice and quinoa.
  2. On each flatbread, spread olive tapenade.
  3. Divide and layer among 4 equal portions: kale, brown rice and quinoa, prepared chicken and feta cheese.
  4. Top each with equally divided Garlic Yogurt Dressing, wrap and serve.
