Quinoa Banana Pudding

Makes: 4 Servings


  • 1½ cups UNCLE BEN’S® Whole Grain
    Brown Rice & Quinoa, prepared, cooled
  • ½ cup heavy cream
  • ½ cup unsweetened coconut milk
  • 1 tablespoon cornstarch
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 2 medium bananas, sliced
  • ¼ cup sliced almonds
  • ¼ cup honey


  1. Combine UNCLE BEN’S® Whole Grain Brown Rice & Quinoa, cream, coconut milk, cornstarch, sugar and salt in a saucepan.
  2. Cook to a boil while stirring constantly. Remove from stove.
  3. Add vanilla and stir. Fold in bananas and divide mixture between 4 bowls.
  4. Top each serving with sliced almonds, drizzle with honey and serve.
