Quinoa Denver Breakfast Bowl

Ingredients
- 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
- ¼ cup Red Quinoa, prepared
- 1 Tablespoon Vegetable Oil
- 4 Tablespoons Green Bell Pepper, diced
- 4 Tablespoons Red Bell Pepper, diced
- 4 Tablespoons Onion, 1/4" diced
- 6 ea Egg
- 1 cup Pepper Jack Cheese, shredded
- 4 Tablespoons Jalapeno, sliced
Quinoa Denver Breakfast Bowl
Makes: 4 Servings
Direction
- In sauté pan, add oil, green and red pepper, and onion. Cook until slightly soft. Add eggs and cook together, scrambling.
- Add cooked brown rice and quinoa into egg mixture and softly toss together.
- Turn off heat and add cheese. Mix until melted.
- Divide equally among 4 serving vessels and garnish with sliced jalapeños.
