Quinoa Denver Breakfast Bowl

  • 2 heaping cups Ben's Original Whole Grain Brown Rice, prepared
  • ¼ cup Red Quinoa, prepared
  • 1 Tablespoon Vegetable Oil
  • 4 Tablespoons Green Bell Pepper, diced
  • 4 Tablespoons Red Bell Pepper, diced
  • 4 Tablespoons Onion, 1/4" diced
  • 6 ea Egg
  • 1 cup Pepper Jack Cheese, shredded
  • 4 Tablespoons Jalapeno, sliced

Quinoa Denver Breakfast Bowl

Makes: 4 Servings


  1. In sauté pan, add oil, green and red pepper, and onion. Cook until slightly soft. Add eggs and cook together, scrambling.
  2. Add cooked brown rice and quinoa into egg mixture and softly toss together.
  3. Turn off heat and add cheese. Mix until melted.
  4. Divide equally among 4 serving vessels and garnish with sliced jalapeños.
