Quinoa Denver Breakfast Bowl

Makes: 4 Servings

INGREDIENTS

  • 2 cups UNCLE BEN’S® Roasted Red Pepper Flavored Brown Rice &
    Quinoa, prepared
  • 1 tablespoon vegetable oil
  • 4 tablespoons chopped green pepper
  • 4 tablespoons chopped red pepper
  • 4 tablespoons chopped onion
  • 6 eggs
  • 1 cup habanero Jack cheese
  • 4 tablespoons crispy jalapeños

DIRECTION

  1. In sauté pan, add oil, green and red pepper, and onion. Cook until
    slightly soft.
  2. Add eggs and cook together.
  3. Turn off heat and add cheese. Mix until melted.
  4. Add cooked UNCLE BEN’S® Roasted Red Pepper Flavored Brown
    Rice & Quinoa into egg mixture and softly toss together.
  5. Plate and garnish with crispy jalapeños.
