Rainbow Cupcakes made with SKITTLES® Original Bite-Sized Candies

Ingredients

  • ¾ cup Unsalted Butter, softened
  • ¼ cup Vegetable Oil
  • 2 cups Granulated Sugar
  • 4 each Whole Eggs
  • ⅓ cup Lemon Juice
  • 3 cups All Purpose Flour
  • 3 tsp Baking Powder
  • 1 tsp Salt
  • 1 cup Buttermilk
  • ½ cup Skittles® Original Bite-Sized Candies, chopped
  • Food coloring (red, orange, yellow, green, blue)
  • 8 cups Whipped Cream, prepared

Rainbow Cupcakes made with SKITTLES® Original Bite-Sized Candies

Makes: 24 cupcakes

Direction

For the cupcakes:

  1. Cream butter, vegetable oil and sugar until smooth. 
  2. Whip in eggs and lemon juice.
  3. Stir in flour, baking powder and salt. 
  4. Add the buttermilk and mix until just combined. Fold in chopped SKITTLES®. 
  5. Separate batter into five equal portions and color with red, orange, yellow, green, blue and purple (red + blue) food coloring. 
  6. Swirl the colored batters into a greased and floured cupcake pan. 
  7. Convection bake at 350F for 20-25 minutes or until done.
  8. Remove from oven and let cool completely.

To finish

  1. Place a stripe of red gel food coloring inside a piping bag with a star tip. Fill bag with the whipped cream. Pipe the color striped buttercream onto the top of each cupcake.
