Rainbow Cupcakes made with SKITTLES® POP'd

Ingredients

1 cup SKITTLES^® POP’d, chopped
¾ cup Unsalted Butter, softened
¼ cup Vegetable Oil
2 cups Granulated Sugar
4 each Whole Egg
⅓ cup Lemon, Juice
3 cups All Purpose Flour
3 tsp Baking Powder
1 tsp Salt
1 cup Buttermilk
as needed Red Food Coloring
as needed Orange Food Coloring
as needed Yellow Food Coloring
as needed Green Food Coloring
as needed Purple Food Coloring (if not available, blend red and blue food coloring to make purple)
2 qt Whipped Cream, prepared

Makes: 24 cupcakes

Cream butter, vegetable oil and sugar until smooth. Whip in eggs and lemon juice. Stir in flour, baking powder and salt. Add the buttermilk and mix until just combined. Fold in chopped SKITTLES^® POP’d.
Separate batter into five equal portions and color each portion with a different color of food coloring. In total, there will be batter representing all 5 colors of SKITTLES^® POP’d.
Add ½ fl oz of each colored batter into each cupcake mold. Swirl colors together using a toothpick or fork.
Bake at 350℉ for 20-25 minutes or until done.
Remove from oven and let cool completely.

Place a stripe of red gel food coloring inside a piping bag with a star tip and fill the bag with whipped cream. Pipe onto the top of each cupcake.
