Roasted Corn & Lime Rice
Ingredients
- 2 cups BEN’S ORIGINAL™ Converted® Brand Rice
- 4 cups water
- 1 tablespoon ham stock base
- 1 tablespoon butter
- 1 tablespoon butter
- 2 cups corn kernels
- 2 cups diced onion
- 2 limes juiced
- 1 tablespoon lime zest
- 1/4 cup cilantro leaves
Roasted Corn & Lime Rice
Makes: 6 servings
Direction
- Prepare rice with water, ham stock base, and butter.
- While rice is cooking sauté onion and corn in butter. Season with fresh lime juice
- Once rice has cooked, mix into vegetable sauté.
- Serve warm and garnish with whole cilantro leaves.
