Ingredients

  • 2 cups BEN’S ORIGINAL™ Converted® Brand Rice
  • 4 cups water
  • 1 tablespoon ham stock base
  • 1 tablespoon butter
  • 1 tablespoon butter
  • 2 cups corn kernels
  • 2 cups diced onion
  • 2 limes juiced
  • 1 tablespoon lime zest
  • 1/4 cup cilantro leaves

Roasted Corn & Lime Rice

Makes: 6 servings

Direction

  1. Prepare rice with water, ham stock base, and butter.
  2. While rice is cooking sauté onion and corn in butter. Season with fresh lime juice
  3. Once rice has cooked, mix into vegetable sauté.
  4. Serve warm and garnish with whole cilantro leaves.
