Spicy Mushroom Slider

  • ⅓ heaping cup Ben's Original Whole Grain Brown Rice, prepared
  • 1 heaping Tbsp Red Quinoa, prepared
  • 3/4 cup Cremini Mushroom, minced
  • 1 each Egg
  • 1/2 cup Mayo
  • 1/2 cup Panko Breadcrumbs
  • 1/2 teaspoon Salt
  • Pinch Black Pepper
  • Pinch Cayenne Pepper
  • 1 Tbsp Light Olive Oil
  • 1/4 cup Spicy Hummus
  • 1 each Avocado, sliced
  • 1 cup Arugula
  • 4 each Whole Wheat Slider Buns

Spicy Mushroom Slider

Makes: 4 servings


  1. In a mixing bowl, combine brown rice, quinoa, mushrooms, egg, mayo, panko breadcrumbs, salt, pepper and cayenne. Divide mixture and form into four patties.
  2. Add oil to skillet and place over medium heat. Add the patties and cook on each side for approximately 6 minutes or until done and internal temperature is at least 165°F
  3. On each slider bun, spread spicy hummus on bottom, top with burger, arugula and avocado slices. Serve.
