  • 3 ½ heaping cup Ben's Original Whole Grain Brown Rice, prepared
  • 1/3 heaping cup Red Quinoa, prepared
  • 1 cup Cheddar Yellow, shredded
  • 1 cup Pepper Jack Cheese, shredded
  • 4 Tablespoons Jalapeno, chopped
  • 1 pound Grilled Chicken Strips
  • ½ cup Pico De Gallo
  • 2 Tablespoons Sour Cream
  • ¼ cup Tortilla Strips

Tex-Mex Quinoa And Chicken Bowl

Makes: 4 servings


  1. Combine warm brown rice and red quinoa with cheeses and jalapenos and toss together to melt the cheeses. Divide among 4 serving vessels.
  2. Place grilled chicken strips on top and garnish with pico de gallo, sour cream and crispy tortilla strips.
