Ingredients

  • 1¾ qts. Water, hot (190°F)
  • 1 box BEN’S ORIGINAL™ Broccoli & Cheddar Brown Rice
  • 38 Flour tortilla, 8-inch, steamed, warm
  • 28½ oz. Deli-sliced ham
  • 30 oz. Frozen chopped broccoli, steamed, warm
  • 14¼ oz. Shredded reduced-fat cheddar cheese
  • Non-stick cooking spray

Toasted Ham & Broccoli Cheddar Rice Melt

Makes: 38 servings

Traditional ham and cheese is upgraded with tender wholegrain BEN’S ORIGINAL™ Broccoli & Cheddar Brown Rice nestled in a warm flour tortilla layered with deli-sliced ham, steamed broccoli and melted cheddar cheese, served wrapped and toasted.

Direction

  1. Combine hot water and contents of seasoning packet in deep full-size steam table pan. Stir well to disperse seasoning in water. Add rice and mix well.
  2. Cover and bake in preheated 400°F conventional oven for 25 minutes or until most of the water is absorbed.
  3. Stir rice well; keep warm. Fluff with fork prior to portioning to obtain maximum yield.
  4. Place steamed tortillas on flat work surface, working in small batches, portion 1/3 cup rice (No. 12 scoop) on tortilla. Spread rice down center of tortilla evenly.
  5. Top each with ¾ ounce slice of ham, ¼ cup broccoli, and 1½ tablespoons cheddar cheese.
  6. Fold sides of tortilla inward and roll tightly enclosing fillings, burrito-style.
  7. Transfer filled tortillas, seam-side down, to full-size steam table pans. Spray tops lightly with non-stick cooking spray. Stack additional steam table pans, on top of each pan, ensuring the bottom of top pan is in contact with wraps. Bake in preheated 400°F conventional oven for 20 minutes. (For more golden brown color, preheat top steam table pans and bake an additional 10 minutes.) Serve warm.

Suggestions

- For decreased labor, eliminate oven toasting procedure and menu as a Ham & Broccoli Cheddar Rice Wrap. Simply build wrap with warm ingredients and serve.
- Utilize whole wheat or whole grain tortillas in place of flour tortillas to increase the nutrititional value.
- Eliminate ham for a tasty non-meat menu option.
